KFC Biscuits?

My husband has been craving KFC biscuits, breakfast style! 

He didnt have faith that I could pull it off, can you believe that? He kept trying to stop me from going into kitchen and starting the biscuits. He’d say Ill just run through KFC. I replied “Are you kidding me? I can make them at home much cheaper.” I dont know if thats really true, but I made them and they were awesome! Even made breakfast style. I found a copy cat recipe online.

Today, I am so thrilled to be able to share my first harvest of tomatoes! This was my second time ever trying to grow tomatoes, and this time it is paying off! :D Yay!

Homemade New York Cheesecake

I finally found the perfect Homemade New York Cheesecake! It is so rich, but so very good! I highly suggest slicing half the size of piece shown here per serving. It is good but filling, sweet and did I say rich? So creamy, the crust is made of precrushed graham crackers, so I took some easy routes. 🤗 I found this recipe at Allrecipes.com! 

Wilton 3D Panda Bear Cake

Here is the cake I made for my daughter this year! It is her 24th birthday and she loves Panda’s! I used a 3D Wilton Bear Cake Pan. I baked a Chocolate Pound Cake in it, and made a round White Cake for the grassy knoll. She loved it! 

Mothers Day Feast

Sliced Smoked Brisket, burnt ends, homemade yeast rolls, and homemade banana bread! We had potato salad, deviled eggs, and macaroni salad too! Yum yum! 

Sunday Dinner

This weekend feels like a holiday and even though it’s Cinco Di Mayo, it feels like Memorial Day. Today my husband and I cooked up a tasty home cooked meal. Hubby smoked the Ribs and corn. I made deviled eggs the evening before, and baked up some cornbread and a delicious Lemon Pound Cake for our dessert. I haven’t mastered potato or macaroni salad so they are store bought. But boy oh boy was this a delicious home cooked meal!

Flower Pot Gardening Take 2

Attempting to grow a flower pot garden for the second time in my lifetime. In all honesty, I bought the plants as sprouts, and all I had to do was keep them living. Apparently I planted too early. We had two hard freezes after my planting. I moved all the pots I could indoors, and covered the plants with plastic outdoors. Before moving indoors my strawberry plant was flowering and had a red berry. I had a nice looking bell and a jalapeño plant, the bell pepper and the basil died along with the strawberry plant. The jalapeño plant lost its leaves but still has a green stem co ing out of dirt, maybe I can revive it. The Romaine, tomato, chives, oregano, cilantro, and marigolds are doing good. I feel like I’m barely hanging on to my lavender, and petunias. I attempted to start carrots and some basil from seeds, they were sprouting and outgrowing the container, so I took off the lid, and they all died. 

Today I enjoyed a turkey sandwich with Romaine lettuce straight from my garden! It is so rewarding actually getting to eat what you have grown! Stay tuned for more updates in the months to come! 

Coffee Pot Showdown! Ninja Coffee Bar, Keurig, Cuisanart take the Cleaning test.

My kitchen isn’t big enough to store all of these coffee pots. Hubby bought the Ninja in October last year. I kept trying to tell hubby we needed to try the coffee pot cleaner, instead of vinegar. Vinegar wasn’t working, and three pots with the same issue, what is the likelihood of that? Your cup fills to maybe 2 Oz of coffee, when you are trying to get any of the choices. The Ninja cleaning light would come on constantly we would clean it, and a few days later, same thing. Apparently the NINJA has had this manufacturers defect for about 2 years and refuse to recall the machine, they keep profiting off sales, seriously it does look, way cool! Lol! I didn’t want it either I knew I had the Keurig from the RV, and The Cuisanart, name brand machines that needed to run some other tests before I gave up on them. Over the weekend. We did just that. We bought two jugs of the $13. Coffee pot cleaner. It says use one bottle, we tried that in all machines. The NINJA did its usual 2 oz. filling, the Keurig said it’s needs water, and the Cuisanart said it also needs water. Ugh! So we reused the mix and put both bottles through all machines. Repeatedly until one seemed to show us some results. Using a glass measuring mixing bowl with ozs., the Cuisanart started giving the exact amounts we were asking for. Today my morning cup of joe is brought to you by Cuisanart. ;)

Pistachio Cream Pie

This is my husbands favorite pie. I made my friends and I Lemon Meringue for our Crafty Social, and I didn’t want him to feel left out. 

Lemon Meringue Pie

This is my first ever Lemon Meringue Pie! The crust shrank, thanks pillsbury, I knew I should have made my own dough. The Meringue doesn’t quite look peaked as much as I have seen on others. I already know the lemon filling is delicious! You betcha, I was licking the spoon! 

I cannot wait to cut into this pie and share a slice with my friends at my crafty social later today. I will attempt to get another photo of a slice of it later, if it lasts that long!

Grilled Chicken Sandwich

I received my first Fitbit last weekend, and decided what the heck I will keep an eye on my calorie intake. I am a bit of a stubborn soul, I want to lose weight, but I want to eat whatever I want. I guess that is not how it works as I am gaining weight and the pants are getting tighter every year. I have resorted to yoga pants, yeah I am one of them gals, stretchy pants everyday. 

To my surprise most of my diet is carbs, how in the world can someone cut out carbs when that is most of my diet? Aye ye ye! I searched Pinterest for ideas and found the Marines diet, a boiled egg for breakfast and lunch, and by dinner I am starving and the calorie intake goes through the roof! 

Today, I chose the boiled egg for breakfast, my hazelnut coffee, and an orange and at lunch which was an early dinner I went for the spinach and baby greens atop a piece of grilled chicken, some swiss cheese, chopped onion and a tablespoon of salad dressing. It was so good! And I was stuffed!

I still managed to get into the peppermint patties, and had two cookies which put me over my calorie intake again. Dang! It is hard to stay within so many calories, I am a hungry girl at night. :( 

HOBO Dinner

One of the first meals I learned to cook when moving out on my own was the HOBO dinner. With only a few ingredients and not a lot of money I could have a delicious meal. 

The HOBO dinner is ground beef formed into patties atop a square piece of aluminum foil, an onion sliced and layered on top of the patty, usually I use corn but tonight I didn't have any; so I used a can of green beans, layered around the patty I quartered potatoes. Top it off with seasonings of your choice a Tablespoon of butter and wrap up the foil tight. Place in oven on top of a cookie sheet so you do not have a juicy mess, and bake for an hour at 375 degrees in the oven.

Italian Ricotta/Cream Cheesecake

Hey again friends and followers! My intention was to make this delicious cheesecake for dessert for my Valentine. I had never made cheesecake before so I had no idea I would have to let it not only cool in oven for over 2 hours but to set in fridge for 6 hours. So I went ahead and made it and we ate it today for dessert after lunch. This particular recipe called for Ricotta cheese and after reading a few reviews and the texture being a little grainy like, it tasted delicious but I was not fond of the texture. Valentine Glazed Sugar Cookies

What is a special Valentines without a special treat? I made my husbands favorite cookie, the sugar cookie recipe from my mother's handy dandy Betty Crocker Cookbook. It called for Almond Extract I may have added a bit too much. But otherwise they turned out great for my first time making glaze for sugar cookies. I found the glaze recipe at Allrecipes.com

Manicotti Italian Casserole

Hey friends and followers! I apologize for my delayed posting. If you follow my other blogs you'd know I am still staying busy around here! This year I decided to cook up a special dinner for my Valentine. I found this recipe at Allrecipes.com it was delicious! Since it is Valentines Day I cut all the pepperonies I placed on top into little heart shapes. I shared the pepperoni scraps with the kids and pets. :) Nothing went to waste! :)
