Wilton Cake Decorating Basics Class

We did it! I have been wanting to learn cake decorating for as long as I can remember licking the batter off my mother's cake beaters. I talked my 17 year old daughter into joining with me, in itself is shocking! But today we paid for the classes. I am so excited! We even went online and purchased the same cutesy aprons in different colors! I am looking forward to showing off my creations, good or bad. :D

Maple Mousse

I finally finished my mousse today. This is very sweet, but love the crunchy almond nut container and then topped with the homemade meringue.. Mmmmm! It will most definitely cure your sweet tooth cravings!!!

Chicken & Sausage Gumbo

Our May hostess, Denise, of There’s a Newf in My Soup!, challenged The Daring Cooks to make Gumbo! She provided us with all the recipes we’d need, from creole spices, homemade stock, and Louisiana white rice, to Drew’s Chicken & Smoked Sausage Gumbo and Seafood Gumbo from My New Orleans: The Cookbook, by John Besh.


Talk about DELISH!! My family loved this recipe and so do I! It took 3 grocery stores well one being Wal-mart before I finally found the File' Powder needed for this recipe. I finally found it at our local Crest Foods Store in Edmond, OK.  Once I had all the stuff together I started the Gumbo and had to finish the rice and eat it tonight for dinner and it was a success with my family of picky eaters!

For my challenge I created bacon bowls and filled them with salad, croutons, and they are topped with Catalina or Ranch dressing. I was in a hurry for this challenge but still intend on trying the Maple Mousse.
