A lady at work I call her “the cookie lady” even though more than one can bake some delicious cookies. This particular gal had the power to change my favorite cookie from chocolate chip to these delicious lemon cookies with white chips. Mmmmm, so good! I had to find the recipe for myself and in my search I found something called cake mix cookies. It’s a lemon cake mix, 2 eggs, 1 stick of butter and white chips, bake at 375 for 8 to 10 minutes you will not be disappointed. I rolled mine in powdered sugar and added a 1/4 tsp of lemon extract, and lemon juice in my batter for added extra lemon flavoring. Nothing like fresh baked cookies right out of the oven with a glass of milk.
