HOBO Dinner


One of the first meals I learned to cook when moving out on my own was the HOBO dinner. With only a few ingredients and not a lot of money I could have a delicious meal. 

The HOBO dinner is ground beef formed into patties atop a square piece of aluminum foil, an onion sliced and layered on top of the patty, usually I use corn but tonight I didn't have any; so I used a can of green beans, layered around the patty I quartered potatoes. Top it off with seasonings of your choice a Tablespoon of butter and wrap up the foil tight. Place in oven on top of a cookie sheet so you do not have a juicy mess, and bake for an hour at 375 degrees in the oven.

Italian Ricotta/Cream Cheesecake


Hey again friends and followers! My intention was to make this delicious cheesecake for dessert for my Valentine. I had never made cheesecake before so I had no idea I would have to let it not only cool in oven for over 2 hours but to set in fridge for 6 hours. So I went ahead and made it and we ate it today for dessert after lunch. This particular recipe called for Ricotta cheese and after reading a few reviews and the texture being a little grainy like, it tasted delicious but I was not fond of the texture. Valentine Glazed Sugar Cookies


What is a special Valentines without a special treat? I made my husbands favorite cookie, the sugar cookie recipe from my mother's handy dandy Betty Crocker Cookbook. It called for Almond Extract I may have added a bit too much. But otherwise they turned out great for my first time making glaze for sugar cookies. I found the glaze recipe at Allrecipes.com

Manicotti Italian Casserole


Hey friends and followers! I apologize for my delayed posting. If you follow my other blogs you'd know I am still staying busy around here! This year I decided to cook up a special dinner for my Valentine. I found this recipe at Allrecipes.com it was delicious! Since it is Valentines Day I cut all the pepperonies I placed on top into little heart shapes. I shared the pepperoni scraps with the kids and pets. :) Nothing went to waste! :)
