Meringue Coffee Cake

The March 2011 Daring Baker’s Challenge was hosted by Ria of Ria’s Collection and Jamie of Life’s a Feast. Ria and Jamie challenged The Daring Bakers to bake a yeasted Meringue Coffee Cake.

This was one of the tastiest yeast breads I have ever made and how much fun it was to try and make it shaped into a wreath. This was my first time ever doing anything like this so it was very fun for me! I will definitely be making more so I can get the wreath shape exactly right! I promised my dear friend Nikki that I would be making her some of this delicious Meringue Coffee Cake.



Recipe Source: Jamie found this recipe on a piece of yellowed paper in her dad’s collection of clipped out and hand-written recipes from the 1970’s, no source, no date, and she tried the recipe and it was brilliant!

Daring Cooks March Challenge - Papas Rellenos



Kathlyn of Bake Like a Ninja was our Daring Cooks’ March 2011 hostess. Kathlyn challenges us to make two classic Peruvian dishes: Ceviche de Pescado from “Peruvian Cooking – Basic Recipes” by Annik Franco Barreau or Papas Rellenas adapted from a home recipe by Kathlyn’s Spanish teacher, Mayra.
