Beef Enchiladas

Tonight I’m sharing my Beef Enchilada it was very good even though I forgot to buy cream cheese for the meat filling. I winged it! It turned out just fine! So very good!

Chicken & Chinese Long Bean w/rice


 Easy!

I received some Chinese Long Beans from a colleague at work, and I had to whip up something show she would know how appreciative I am of her generosity. I went with a Chicken Stir fry. I added in garlic, soy sauce, a little chicken broth, along with my chicken and long beans. While they cooked I made my rice. So tasty and very filling.

A colleague gave me this melon. I’ve never had one like this before, and after eating first and then researching how to eat, I believe you’re not suppose to eat it raw like this. It seemed too green tasting, being it’s my first ever one I don’t know how it’s suppose to taste. :)

Homemade Chicken Enchiladas

 


Hello there, my hungry friends and followers!

I always seem to find myself ordering chicken enchiladas when I eat at a Mexican restaurant. Times have been hard the last 10 years or so and I finally decided to try a recipe I found on Pinterest for these tasty Chicken Enchiladas, and oh my goodness were they good! My husband literally became giddy over the fact I was making anything from the Mexican food palette. He really wants homemade Tamales, but I do not like those, so he will have a hard time getting me to try that recipe. Ha! Maybe someday, never say never!

I like to purchase those Rotisserie Chickens for like $6 at the grocery, near the deli section, since they are cooked, I can break off a chicken leg or two and a wing, I have a snack before I pull off the skin and get some meat off the bones. I then shred it using a fork before I mix in my cream cheese and Mexican cheese blends. Plop the now spiced up cheese mix into a tortilla before rolling into burrito shapes and placing in my greased 9 x 13 dish. Then it's time to start the sauce to pour over them, top that off with more Mexican cheese blend and place in the oven. 

Hubby said he wanted 2, they were huge! I kind of added a little extra chicken and cheese not to mention I was one tortilla short since it was dropped onto the floor so that made the others even fatter!


The process of putting them together before baking at 350 degrees for 25 minutes.



Honestly, I wish I was lying about how really good they are, I wished I had made refried beans and Spanish rice to go with this, I feel it did need other flavors to go with it.

Celebrate Your Day Plate


Hello friends and followers! 

It is with a heavy heart that I have to make this post. ;) 

I was devastated when I came home from work to find my plate broken. To my surprise after 30 years of marriage my hubby decided to do dishes, and this was one of his sacrifices.   

I bought this plate or received it in 1995, or  some time around 1998 when I became a Pampered Chef Consultant. My family used this plate for every birthday or special occasion. If it was your day to celebrate you were awarded the special plate to eat off of. We had fun with it. I guess I need to find me a new “Celebrate Your Day” plate so I can continue our family tradition.

What an easy recipe! After sitting over night they tasted even better! Reminded me of a little Debbie brownie cake. I feel they need a thin layer of frosting but they’re edible without it.
