Your papas look great! It seems most people opted for the papas rather then the ceviche and I have to say that those papas look great!

Thank you for the sweet comments!! I wanted to do both of the recipes but "THE BOSS" wouldn't agree to the fish. I plan on making these again with something as a relish or topping next time around! I like anything fried to be extra golden but not burnt so I tend to lean towards a crispy outside layer.
